I was neck-deep in harvest chaos and couldn’t babysit one of our vineyards so I trusted the grower to call the pick—and they did. Early. Way early. When the fruit showed up, it was
so low in sugar I briefly considered making a nice summer rosé. But there was too much of it, so I said, “Eh, let’s make red wine and hope for the best.” What I got tasted more like raspberry juice
than anything resembling Cabernet Sauvignon. Fast forward a year: I gave it another taste… and boom—creamy texture, vibrant fruit, absolutely delicious. So I thought: Why
not make it sparkle?
